Description:
Lupinus mutabilis are annuals with lush green, palmate shaped leaves and tall, showy spikes of pea-like flowers in a deep ultramarine blue with a yellow centre. Lupinus mutabilis are grown in the Andes for their edible seeds. Seeds must be first soaked and boiled and rinsed for several days to remove toxins, before used in soups, stews, and salads. The rest of the plant is not edible.
